Leftovers are not something that I am used to having, usually everything that gets cooked gets eaten right away, cauliflower rice is probably the exception to the rule. This salad is fresh, crunchy and very filling, perfect for lunch.
I know that tuna is a great source of protein, but I find it difficult to eat on its own. These lettuce wraps are the best way to eat tuna if you ask me. The mix of vegetables in with the tuna makes it even better.
