If you ask me it is a Hawaiian Pizza Salad.  Yes it is a real thing, I know it is real because I made it.  

Hawaiian pizza was always my favourite; I love the way the flavours work together. Anyone that gets to know me learns quickly that I love salad, so the idea of a salad based on my favourite pizza toppings appeals to me.

It is a summer of salads!! The warm months mean lots of fresh veggies and endless possibilities for salad.  Anyone that knows me knows I could eat salad for every meal, I love them, lots.  Most of the time I stick with the simple mixture of protein, lettuce leaves, crunchy veg and a simple dressing. On occasion, I like to make something a little fancier.

No Crust Quiche

I was never a fan of quiche as I found it very heavy and difficult to eat, the no crust quiche was an irresistible concept for me, all the good parts of a quiche without the heavy part.

My previous experience of fish cakes was of bland white burger shaped food that was a bit blah.  I used a recipe from a food magazine as the base for this but swapped out some of the ingredients to clean it up. It’s a great way to use up left over cauliflower rice or fish – if you get leftovers that is.
