For once I have a 'rice' recipe that doesn’t use cauliflower, I know right. This risotto is parsnip based, it easy to make, packed with flavour and is a great base that can have more yummy ingredients added.

Expanding tastes

As the kids get older, they get more open to trying new foods and different flavours. The use of garlic is no longer moaned about, the inclusion of cider apple vinegar and coconut aminos doesn’t need to be hidden; they like these flavours. The kids visit a local Chinese restaurant with their maternal grandparents now and then, this had led to requests like 'Can you make Chop Suey?' and 'Would you be able to make dumplings?'

This is my go to marinade for chicken at the minute.  To free up some time on the weekends I have been bulk buying meat, preparing and then freezing the meat. Chicken has been the primary meat over the last few weeks but it can get boring quickly.  Enter this amazing marinade.

That is usually the response to the question what do you want for lunch? I won't go into how much when people answer a question with a question. Let's focus on the recurring request for tuna every weekend. Every week it is the same request for a tuna cheese melt. I don’t have any issues with providing tuna for lunch; I get bored with the leftover tuna in the fridge and no desire to eat it.

Tom Kha Kai

Tom Kha Kai or Tom Kha Gai

This classic soup has quintessential Thai ingredients. The chicken and coconut soup is rich and flavourful. There are many variations to the soup, but a few constants, coconut milk, lemongrass, chillies and ginger are usually the base of the soup. A little fish sauce, mushrooms, coriander and kaffir lime leaves can be added for a bit more depth and flavour. I've put together this recipe as a basic and easy base that you can add to depending on what you have in the pantry.

Yes, Yes I do, but I won't be eating any of the tasty pizza available from your local pizzeria. I think I'll go for the low carb, tummy friendly option of courgette pizza crust. There is nothing better than getting a sneaky treat without having to deal with that horrible bloated and sick feeling.

Chicken Rollatini

Italian Classic – not really

Rollatini, otherwise known as Involtini is an Italian style dish. It is usually made with slices of aubergine, dusted with flour, covered with cheeses and seasoning then rolled up and baked. It isn't new to use chicken in place of the aubergine, but it is totally up my street. This recipe uses my nut free pesto to a fresh flavour and a little crunch.

Kids are making friends with salad

I don't like the kids getting older. I still think of them as the 5 and 3-year-olds I first met so many years ago. I struggle to reconcile the man-sized 13 year old, and almost man-sized 10-year old that rock around the house now. While I struggle to think of the boys getting older, I eagerly embrace the ever-expanding list of foods they will eat and are willing to try.

Something different

Sweet and savoury balls of awesome. If you have come this far, you obviously want some new flavour combinations to try. Coconut and pineapple go well together. We all know the Pina colada principle applies. We also know pineapple and pork go well together. Hawaiian Pizza is a firm favourite around here. Enter some creative madness (or genius) why not combine all three flavours?

Some advantages to going out of town

My partner in crime has to travel around a bit as part of his job. Usually, it's a few trips a year and the odd day trip down to Hamilton thrown in to make life interesting.  I don't like it when he heads out of town, I kind of like having him around, so it sucks when he goes away. The exception to this is when he goes to Hamilton. Trips south of Auckland usually come with a pit stop at Pokeno bacon.

Guac you gonna do about it?

I love avocados and get very excited when they come into season, I would happily eat them with every meal but guacamole is my favourite way to have them.

I will be honest, I am eating guacamole with almost every meal at the moment. I may be adding a healthy dose of jalapeno so that it is too spicy for everyone else.  I didn’t say I was doing that, I might be doing it.  It could be that the jalapenos are extra spicy.

Bread 

Bread is a funny thing. It is one of the very few foods that I know does not agree with me that I still crave regularly, I try my very best to avoid it, but some meals just feel incomplete without it.  Burgers are one of those meals. I love a salad bun, but sometimes I want a burger bun.
