Cake is one of the things that I find it is tough to create a grain and sugar-free version that compares to the traditional recipe and results.  After many years of experimentation, I think I have finally discovered a way to make a no grain, no sugar cake that is light, fluffy and spongy; it is all about the eggs people.  This cake recipe has passed the child test so I can say without a doubt that it is just as good as a standard no fail sponge cake recipe.

Ingredients

2 egg whites

3 eggs

1/4 cup coconut cream

1/3 cup maple syrup

1/2 tsp. baking soda

1/2 cup coconut flour

2 tsp. vanilla bean paste

1/2 cup butter, melted

3/4 cup Banana Icing

 

Instructions

Preheat oven to 180 degrees C/ 350 degrees F

Shift the flour and baking soda together in a bowl

In another bowl, mix together the 3 eggs, melted butter, coconut cream, vanilla and maple syrup until it is foamy

Mix together the wet and dry ingredients

In a bowl, whisk the egg whites until they are soft peaks

Fold the egg whites into the batter

Pour the batter into a lined cake tin

Bake for 30 minutes at 180 degrees C/ 350 degrees

Cool on a wire rack for 20 minutes before icing the cake.
