Tuna and Kale Salad
Tuna and Kale Salad - Primal, Paleo, Kid Friendly and Clean Eating
Leftovers are not something that I am used to having, usually everything that gets cooked gets eaten right away, cauliflower rice is probably the exception to the rule. This salad is fresh, crunchy and very filling, perfect for lunch.
1 bunch kale
425g tinned tuna in spring water
1 tbsp. grated ginger
1/4 cup chopped herbs
3 spring onions
2 cups cauliflower rice
2 tbsp. coconut aminos
2 tbsp. lime juice
Steam kale in a steaming basket over a large saucepan of simmering water for 5 minutes or until the kale is wilted.
Allow the kale to cool slightly then mix the kale with all of the other ingredients
