Tools to zest fruits 

I don't know about you, but I think that citrus oils are underrated. They are aromatic and add a nice zing to many dishes, you get all of the flavours without the acid you would get from using fruit. 

The key to real zest is getting the skin without getting any of the pith of the fruit, there are many tools you can use to get zest. 

Y Peeler, Zester and Microplane

Y-Peeler 

When you use a Y-peeler you may have to remove some of the pith from the zest, you can use a sharp knife to remove the pith. This kind of zest is best used in things like stew, stocks and when you are roasting meats and vegetables. That sort of zest will give you a subtle flavour of citrus.

Zester 

This little tool gives you thin curly strips of zest when you use a zester you get the skin, but you also get oil from the fruit. This kind of zest is best used in things like sauces or as a garnish for foods. If you don't have a zester, don't worry you can create the same zest by julienne slicing the zest you get from a Y Peeler.

Microplane 

A microplane is basically a grater, you get very fine shaving and little pith from the fruit. This kind of zest is best used in baking or for salad dressing.
