Shredded Sprout Salad
Shredded Sprout Salad - Primal, Paleo, and Clean Eating
6 bacon slices, diced
3 cups shredded Brussels sprouts
120g. avocado diced
1 tsp. Dijon mustard
4 tsp. olive oil
2 tbsp. cider apple vinegar
2 tbsp. red onion, chopped
1/2 tsp. salt
Cook bacon in a large heavy non-stick skillet or frying pan until crispy.
Transfer the bacon to some kitchen paper or a paper towel to drain and set aside.
In a small bowl, whisk the vinaigrette ingredients.
Place Brussels in a bowl and toss everything together.
Pour dressing over the salad, top with avocado and bacon and serve right away.
