Mango Chicken Curry - Primal, Paleo, Kid Friendly and Clean Eating

Mango chicken curry is one of those dishes that I love for a weeknight dinner.  It is fruity and meaty which is always a winning combination if you ask me.  It is simple to make and perfect as a freezer meal.  You can add in some seeds or raisins to mix it up a little.

Ingredients

600g chicken diced

1 onion finely diced

1 red pepper diced

2 mangos diced

2tsp. curry powder

1tsp. turmeric

1tsp. coriander

1 can coconut milk

1tbsp. Coconut oil

 

Instructions

Heat the coconut oil over a low to medium heat, add the onion and cook off until it is soft, when soft add in the pepper and the mango and cook for 5 minutes.

Add in curry powder, turmeric, and coriander, stir in and make sure that everything is covered.  

Add the coconut milk and simmer for 5 minutes. 

Remove half of the sauce and blend it until smooth, add this back to the pan and add in the chicken. 

Simmer with the chicken in the sauce for 30 minutes.

Serve over rice
