Baked Macaroons - Primal, Paleo, Kid Friendly and Clean Eating

The traditional macaroon is made with nuts, sugar, eggs and food colourings.  The coconut macaroon is usually found in the UK, but even they have some nuts in them.  This recipe for coconut macaroons is completely nut free but still tastes wonderful.

Ingredients

1 cup coconut threads

1 tbsp. coconut flour

1/2 cup coconut milk + 2tbsp.

3 tbsp. honey

1/4 tsp. vanilla bean paste/powder

 

Instructions

Preheat oven to 180 degrees C/ 350 degrees F

Put all of the ingredients into a pan and mix them together over a high heat

When combined reduce the heat and simmer for two minutes

Scoop the mix into balls and put them onto a lined baking sheet

Bake for 12-15 minutes or until the macaroons are golden brown

Remove from the oven and allow them to cool on a wire rack
