Christmas Fruit Cake - Primal, Paleo, and Clean Eating

Fruit cake always makes me think of Christmas and this recipe is one I got from my mother law, but it is a hand me down from her mother in law.  Jay loves fruit cake, so it is nice to have a recipe that he likes for special occasions and Christmas.

I swapped out the wheat flour and normal sugar; I like using a mix of dried fruit soaked in a little rum to make sure the cake stays nice and moist.


3 egg whites

2 eggs

1/4cup coconut cream

1/3cup maple syrup

1/2tsp. baking soda

1/2cup coconut flour

2tsp. vanilla bean paste

1/2cup butter, melted

1 1/2cups fruit cake mix



Preheat oven to 180 degrees C/ 350 degrees F

Shift the flour and baking soda together in a bowl.

In another bowl, mix together the 2 eggs, melted butter, coconut cream, vanilla and maple syrup until it is foamy.

Mix together the wet and dry ingredients leave the fruit cake mix to one side.

In a bowl, whisk the egg whites until they are soft peaks.

Mix in the fruit cake mix to the batter.

Fold the egg whites into the batter.

Pour the batter into a lined cake tin.

Bake for 30 minutes at 180 degrees C/ 350 degrees F.
