Chicken Soup - Primal, Paleo, Kid Friendly and Clean Eating
900g chicken thighs, skinned and boned
1 large onion, finely chopped
1 large carrot, finely chopped
1 celery stick, finely chopped
2 large garlic cloves, finely chopped
2tbsp. finely chopped fresh continental parsley stems
2 sprigs fresh rosemary
salt and pepper to taste
In a large stockpot or saucepan add the chicken, onion, carrot, celery, garlic, parsley, rosemary, water and bring it to the boil.
Reduce the heat to a gentle simmer, cover the pot, and simmer for 30 -40 minutes.
When the vegetables are tender remove the chicken from the pot, shred the chicken, and add it back to the pot.
Use a stick blender to puree the soup.
Simmer the soup for 10 minutes before serving.
