Chicken Rollatini - Primal, and Clean Eating
250g cream cheese
½cup nut free pesto
6 chicken breasts
¾ can tomatoes
1cup grated mozzarella
Preheat oven to 200 degrees C/ 400 degrees F.
In a medium bowl, soften cream cheese with a fork, add pesto and mix well then set it aside.
Slice the chicken breasts in half width ways
then flatten out the chicken between 2 pieces of baking paper.
You can use a meat mallet or rolling pin until thin.
Spread cream cheese pesto on the chicken pieces.
Roll up the chicken pieces then arrange them in a baking dish.
Top with tomato sauce and cheese.
Bake for about 25 to 30 minutes or until chicken is cooked through and cheese is golden brown.
