Blueberry Muffin Balls
Blueberry Muffin Energy Balls - Primal, Paleo, Clean Eating and Kid Friendly
1 cup dried blueberries
1 cup dates, soaked and chopped
1 tbsp. lemon juice
1 1/2 tsp vanilla powder
1 cup sunflower seeds
1 cup pumpkin seeds
Place the sunflower and pumpkin seeds in a food processor and blitz, when the seeds are starting to break down add the dates and process again.
When the dates are chopped into smaller pieces add the blueberries, vanilla and lemon juice.
Process until the mixture starts to stick together.
Roll the mix into balls; you should get approximately 20 balls from the mix.
