Sweet Potato Tots
Sweet Potato Tots - Primal, Paleo, Kid Friendly and Clean Eating
2 medium size sweet potato, cubed
2 tbs coconut milk
1 cup kale, finely chopped
1 shallot, finely chopped
1 tsp cumin
1 garlic clove, minced
Preheat oven to 200 degrees C/ 400 degrees F
Line a baking sheet with baking paper and spread out the sweet potato cubes, lightly oil them and roast the potatoes for 20 minutes.
When the sweet potatoes are roasted, set them aside to cool slightly before mashing.
In a large bowl mix the mashed potato with the other ingredients.
Roll the mixture into small balls and place them on a lined baking sheet, alternatively, you could pipe the sweet potato onto the baking sheet.
Bake the tots for 25 minutes at 200 degrees C/ 400 degrees F.
