Primal Bread - Primal, Paleo, Kid Friendly and Clean Eating
Primal Bread, sounds like one of those alternatives that could easily become something that you could overdo quickly. Don't get me wrong; I miss sandwiches as much as the next person, but this bread isn't really the kind you want to make sandwiches out of. This primal style bread is thick and filling, the ham and eggs pack a big protein punch which makes it an amazing choice for a snack or a nice slice next to your poached eggs in the morning.
You can swap out the sunflower seed meal for almond meal if you do not have issues with nuts.
1 ½ cups sunflower seed meal
¾ cup tapioca flour
½ tsp. salt
½ tsp. baking soda
1 ½ tsp. cider apple vinegar
1 tbsp. parsley
1 cup grated courgette, strained of moisture
⅓ cup ham
½ cup grated parmesan cheese
2 tbsp. pumpkin seed
Preheat oven to 160 degrees C/ 320 degrees F
Line a loaf tin with baking paper
In a large bowl mix together the sunflower seed meal, tapioca flour, salt and baking soda together.
In a separate bowl whisk together the eggs and cider apple vinegar, add the parsley, courgette, ham, and cheese, and mix well.
Add the wet ingredients to dry ingredients and mix everything together well until you get a batter.
Pour the batter into the lined loaf tin and sprinkle the pumpkin seeds over the top of the batter.
Bake for 40 minutes or until the top of the bread is golden brown, use a skewer to test that, the inside of the loaf is baked, when the skewer come out clean, the loaf is ready.
Remove the loaf and allow the loaf to cool before slicing.
The loaf can be frozen.
