Orange Salmon - Primal, Paleo, Kid Friendly and Clean Eating
1tbsp. coconut oil, melted
1tbsp. fresh orange juice
1tbsp. orange zest
1 ½tsp. dried ginger
1 ½tsp. ground cumin
1 ½tsp. ground coriander
1 ½tsp. salt
¼tsp. ground cayenne pepper
1kg salmon fillets
In a small bowl mix together the oil, orange juice, zest, ginger, cumin, coriander, paprika, salt, and cayenne to form a paste, it should have a consistency of thick salad dressing.
Place the salmon in a dish or tray that is safe for the oven, massage the paste marinade over the salmon, then cover and refrigerate 30 minutes.
Heat the griddle pan over a medium heat, when the pan is nice and hot place the salmon in the pan, skin side down (depending on the size of the pan you may need to work in batches), wait for 3-5 minutes before checking the salmon.
If the salmon starts to lift easily without the skin sticking it is ready to turn over.
Cook on the other side for 3-5 minutes.
Remove from the pan and serve
