Enchilada Sauce

Enchilada Sauce - Primal, Paleo, Kid Friendly and Clean Eatin

I’m a little obsessed with Mexican food right now, I have no idea why and I don’t think it’s a bad thing.  This sauce is easy to make and tastes amazing on top of enchiladas, which I love.


400g tomato paste/ chopped tomatoes

¼  onion, minced

⅓cup vegetable broth

1tbs coconut oil

½tsp garlic, minced

½tsp dried oregano

½tsp chili flakes

salt and pepper to taste



In a saucepan add coconut oil over a medium heat.

Cook off the minced onions until they become translucent.

Add tomato paste and broth along with the seasonings.

Cook the sauce for about 10 minutes; you know it’s ready when it has thickened.
