Courgette Parmesan Waffle
Courgette Parmesan Waffle - Primal, Paleo, Kid Friendly and Clean Eating
2 cups courgette, grated
1 large egg
1/2cup grated Parmesan
1/2cup chickpea flour
Salt and pepper to taste
Grate the courgette and press it to remove any excess liquid, I like to use a clean cotton dishtowel.
Preheat the waffle iron to medium and the oven to its lowest setting.
In a large bowl, whisk together the egg, milk, and 1/4cup of the grated Parmesan.
In a small bowl, combine the flour and some salt and pepper.
Add the small bowl contents to the large bowl then add the courgette and mix well.
Brush the waffle iron with a little coconut oil
Spoon in a rounded tablespoon of the batter into the centre of the waffle iron then close the lid.
Leave the waffle to cook until it is lightly browned, remove the cooked waffle and put it in the oven to keep them warm.
Serve the waffles with the remaining ¼cup of parmesan cheese
