Chorizo Stuffed Dates - Primal, Paleo, Kid Friendly and Clean Eating
There is something about sweet and spicy; the mix just works, and in this case, the slight spice of the chorizo and sweetness of the dates are perfect together.
15 medjool pitted dates
450g Spanish chorizo cut into 15 blocks
5 slices prosciutto, cut into thirds
1/4 cup maple syrup
Preheat the oven to 200 degrees C/ 400 degrees F.
Line a baking tray with baking paper or a silicone baking mat.
Slice down the side of each of the dates; insert a chorizo block inside each of the dates.
Use your fingers to squeeze the date back together.
Wrap each of the dates in a strip of prosciutto and secure the end with a toothpick.
Lay out the dates on the baking tray.
Roast the dates in the oven; it takes between 3-6 minutes for the prosciutto to start becoming crispy, turn the dates when one side gets crisp, and continue to roast.
When the prosciutto is almost ready, remove the dates from the oven, brush them with maple syrup and return them to the over for another 2 minutes.
Serve the dates hot.
