Breakfast Crunch - Primal, Paleo, Kid Friendly and Clean Eating
This is another recipe that was born from my inability to eat nuts, sometimes you want something for breakfast that isn't eggs and bacon, this is a great one to keep in the fridge for those mornings.
1 cup pumpkin seeds
1 cup coconut
1 cup sunflower seeds
¼cup figs, chopped
2tbs coconut oil
Over a medium heat lightly toast the seeds and coconut.
In a small pan heat the coconut oil and honey and mix them together
Add the toasted seeds and coconut to the oil and honey mixing well.
Add the figs and stir well.
Pour the mix onto a lined baking tray and let it cool.
Break into chunks and store in an airtight container.
