Mmmmm ribs that is all I can think about when I think about barbecue sauce

My obsession with ribs is reasonably recent, I tried BBQ ribs for the first time at Christmas in 2013, I know what have I been doing with my life? Let me assure you I have now seen the light and embrace the awesomeness that is BBQ ribs.

Since my first encounter with awesomeness, I have been working to perfect my own sauce so that I can have awesomeness at home whenever I want.

My journey is by no means at an end but after a few experiments I have a sauce that has great flavour, isn't too sticky and stands up to low and slow style of cooking

The evolution of my sauce will continue but this is my go to no fail sauce for now.


1tsp. cumin seeds

5 garlic cloves

fresh thyme

4tsp. paprika

2tsp. fennel seeds

fresh rosemary

10 bay leaves

juice 1 orange

zest 1 orange

3tbsp. balsamic vinegar

3tbsp. olive oil

3tbsp. honey

3tbsp. maple syrup

150ml tomato puree



Take the dry ingredients and fresh herbs but not the bay leaves put them to one side, grind up the dry ingredients, you can do this is a spice blender, food processor or by hand.

Add the ground herbs to a saucepan

Add the wet ingredients to the saucepan and mix everything together then add the bay leaves.

Over a medium heat, stir the sauce until it begins to thicken, the sauce should start to look shiny, once it does remove it from the heat and take out the bay leaves.

Let the sauce cool before pouring over your meat
