Bacon Jam - Primal, Paleo, Kid Friendly and Clean Eating
Most people that know me know how much I love bacon, this bacon jam is a great option if you are looking for an addition to a cheese board or a different way to have bacon with eggs.
250g bacon, fried or oven baked
1tbsp. cider vinegar
1tsp. Liquid Smoke
1/2tsp. black pepper
Fry or oven bake the bacon, until crisp, the set aside to cool then crumble.
In a frying pan, add a few tablespoons bacon fat, over a low heat, sauté the onion until just soft.
Stir in the bacon, tomatoes, honey, vinegar, liquid smoke, salt and pepper.
Let the mix simmer until the mixture is thickened.
Spoon into a sterilised jar and keep refrigerated.
You can freeze the jam if you want to.
