Pork shoulder hash - Primal, Paleo, Kid Friendly and Clean Eating
Leftovers are not something I usually need to think about as most of the time whatever food is around gets eaten. Pulled pork is probably the only exception to this. On the odd occasion, I have had a little pulled pork leftover and for a while didn’t really know what to do with it. One morning I found our fridge without bacon (I almost called emergency services for help) but then I found the leftover pulled pork and thought I’d see how garlic pork went with eggs. After a few experiments I came up with this recipe, hopefully, you enjoy it as much as we do.
Leftover pork shoulder
1 apple, cored and cubed
1 sweet potato, cubed
4 eggs, beaten
1tbs coconut oil
Over a medium heat melt coconut oil and add the sweet potato and cook until softened.
Add the pork to the sweet potato and cook for about 5 minutes, depending on how much pork you have you may need to add more oil to stop it sticking to the pan.
Once the pork is heated through add in the apple and cook for about 3 minutes.
When the apple starts to soften add the eggs to the pan and stir constantly, the eggs will scramble and coat the other ingredients.
When to eggs are cooked to your liking remove from the heat and serve.
