Onion & Sausage Stuffing
Caramelised Onion & Sausage Stuffing - Primal, Paleo, Kid Friendly and Clean Eating
I take no credit for this recipe, it was one I stole this one from my partner, I have no idea where he got it from but he made it for me and I loved it.
500g minced pork
2 onions, sliced
1 sweet potato diced
200g mushrooms, roughly chopped
2tbs cider apple vinegar
2 eggs, beaten
⅓ cup chicken stock
1tbs rosemary, chopped
1tbs thyme, chopped
2tbs coconut oil
1 garlic clove, minced
Preheat oven to 190 degrees C/ 375 degrees F.
Cover a baking sheet with foil, throw diced sweet potatoes, and sprinkle with oil.
Bake for about 15-20 minutes, then set aside.
Over a medium high heat melt, one tablespoon of coconut oil, add the garlic and mushrooms, cook off until the mushrooms are soft.
Once cooked add the mushrooms to a large baking dish.
In another pan melt the other tablespoon of coconut oil over a medium heat then add the sliced onions and stir continuously to allow the onions to caramelise, this will take about 10 -15 minutes.
Cook off the pork mince in the pan the mushroom have been cooked in, use a wooden spoon to break up the mince, cook until it is almost cooked through.
Once done mix together the mushrooms, mince and sweet potatoes.
Mix in the chicken stock, vinegar herbs, and eggs.
Put the mix in the baking dish and bake at 190 degrees C/ 375 degrees F for 10 minutes, add the onion and then cook again for 5 minutes.
Try this with
