Cauliflower couscous - Primal, Paleo, Kid Friendly and Clean Eating

One of the questions people as me often is if you don’t have rice/bread/pasta/couscous etc. What do you have instead? This is a great replacement for couscous that is simple to make and just as versatile as the real thing.  Who knew cauliflower was so cool?

Ingredients

1 head cauliflower - grated

1/2 white onion - finely minced

1tbs coconut oil

optional- 1 garlic clove minced

 

Instructions

Use a food processor to grate cauliflower, the larger grater is better for this.

In a large frying pan heat coconut oil over a medium heat, add onion and cook until the onion is soft and transparent.

Add in cauliflower and stir well, onion should be well mixed in.

Cook for 5 - 10 minutes, remove from the heat before the cauliflower begins to colour.

Serve the cauliflower hot or cold.
